UDON NOODLES WITH TOFU

INGREDIENTS

  • udon noodles (3.1oz dry)
  • ½ tbsp olive oil
  • 1 clove garlic, minced
  • ½ cup fresh asparagus, cut into ¼" pieces
  • tofu, drained and cut into ½" cubes
  • ¼ cup frozen corn
  • 1 tbsp low sodium soy sauce
  • ¼ tsp white pepper
  • 1 tsp sesame oil

DESCRIPTION / INSTRUCTIONS

  • Cook the udon noodles according to the package.
  • Heat the oil over medium high heat. Then add the garlic and saute for 30 seconds - 1 minute till flagrant.
  • Add the asparagus and saute for 3-4 minutes until tender.
  • Add the frozen corn and saute for another 2-3 minutes.
  • Add the tofu and saute the mixture for 1-2 minutes.
  • Add the soy sauce and mix to combine and coat well.
  • Sprinkle the white pepper on top, then mix to combine.
  • Then drizzle the sesame oil on top, turn the heat down to medium and toss to combine.
  • Remove from heat, serve and enjoy. Or pack it up for school!
